Keep your menu short.

It's tempting to keep adding one more dish to the menu to satisfy a few more customers. But before you know it, your menu is so long that you can't keep the ingredients straight. With too many menu options, you also have less room for ingredients, so you're more likely to run out of things that are top sellers. Resist the urge to grow your menu, and stick to a list of a few items that you know will sell reliably. Prep your ingredients before loading the truck.

You don't want your employees to be worried about chopping lettuce, grating cheese, and doing other prep work while they're also taking orders and getting food out to customers. Sometimes, you might head out with the truck with a plan to sell out, then return to your commissary to reload. This can work, but you may instead want to plan on staying out a certain time and returning to restock no matter what. This way, your employees can be back at the commissary, preparing to load the truck at a certain time. When you arrive, they can get the truck loaded up and ready to go again so you have less downtime. With this approach, you also know exactly when you're going to have a break to clean up, restock, and tidy things, so you won't be as worried about getting these things done during the height of service.
