This way, your employees can be back at the commissary, preparing to load the truck at a certain time. When you arrive, they can get the truck loaded up and ready to go again so you have less downtime. With this approach, you also know exactly when you're going to have a break to clean up, restock, and tidy things, so you won't be as worried about getting these things done during the height of service.
